Ingredients We eat a loaf of this bread about every 4-5 days.

  • 4 cups organic whole wheat bread flour
  • 1 teaspoon active yeast
  • 1 teaspoons salt
  • 2 tablespoons sunflower seeds
  • 2 tablespoons everything seasoning (garlic, onion, sesame seeds, poppy seeds)
  • 1/4 to 1/3 cup sourdough starter (optional)
  • 2-1/4 cups filtered water (the chorine in tap water will kill the yeast)

Directions:

  1. Combine flour, dry yeast, salt and caraway seeds and everything seasoning in a glass mixing bowl
  2. Add sourdough starter and water*
  3. Turn together using a large spoon until blended well (It will look wetter than you think it should)
  4. Cover with plastic wrap and let rise overnight (don't set it directly on granite. It's too cold.)
  5. Place Dutch oven in the oven and preheat to 450º (recommend lining dutch oven with parchment paper)
  6. Carefully pour the dough into the hot Dutch oven. Then use a knife to slice a line down the middle (I find it works best if I wet the knife first)
  7. Sprinkle the everything seasoning to cover the top of the bread
  8. Bake for 30 minutes with lid on
  9. Bake for 15 more minutes with lid off.
  10. Remove from Dutch oven to cool
